Nana's Corned Beef Hash


Corned beef hash and eggs is one of my all time favorite foods! This is an adapted/abbreviated version of my Nana's original recipe, prepared the way I like it. It's absolutely delicious and such a special treat!



Ingredients

  • 1 can Libby's Corned Beef (12oz), or fresh corned beef
  • 4 medium potatoes, peeled
  • 1 onion, finely diced
  • appox. 5 slices bacon, cooked and eaten, bacon fat reserved (or butter)
  • 1 tsp salt
  • 1/4 tsp pepper plus more to taste
  • 1/2 tsp dry mustard
  • 1 tsp worcestershire sauce
  • eggs (to serve on side)
Edit 6/8/2020 - Made this with red onions and red potatoes, as well as Goya corned beef instead of Libby's . Very delicious!

Directions

To make the hash:
1.) Peel and chop potatoes in half and add to a pot of boiling water. Boil until completely cooked but not falling apart (potatoes will continue to cook when added to hash).
2.) While the potatoes are cooking, fry up a pan of bacon. You can eat the bacon as a pre-hash snack, but reserve the bacon fat. Add the diced onions to the bacon fat and cook over medium heat for 3-4 minutes.
3.) Dice the potatoes into 1/2 inch cubes. Add to the onions and cook for 3-4 minutes further.
4.) Dice the canned corned beef and add it to the potatoes and onions. Add all spices to this mixture (salt through worcestershire sauce) and continue to cook until heated through.

To make the eggs:
Heat 1 tablespoon butter over medium heat in nonstick skillet. Once butter is melted, add eggs to pan and cook until whites are set but yolk is runny. Flip over the eggs and continue to cook for just a few seconds up to 1 minute depending on desired doneness.

Havarti Mouthfull - Turkey and Dill Havarti Sandwich Recipe


Hello All!

Today I'm bringing you my version of a favorite sandwich we discovered at a charming local lunch spot. This sandwich is sooo delicious, and it includes fresh tastes of summer with dill and cucumber. I love recipes like this because it makes for such a delicious dinner, yet so fast to put together!

Ingredients

  •  Sliced bread (I used Pepperidge Farm's oatmeal sliced bread)
  • Tomato, sliced into rounds
  • Cucumber, sliced into rounds
  • Dill Havarti Cheese (you can use sandwich slices, but a block of cheese sliced tastes even better)
  • Mayonnaise
  • Fresh Dill
  • Sliced Turkey Breast
  • Salt 
  • Pepper
  • Garlic Salt (optional)

Directions

 Toast bread slices. Dice the fresh dill and stir it into the mayonnaise. Spread mayo on the toasted bread.

Layer tomato, cucumber, cheese and turkey breast onto the bread. Sprinkle with salt, pepper and garlic salt if desired. Secure sandwich with toothpicks and cut into large trianges.

Grandpa Hoagies, a.k.a. The Definitive Italian Hoagie Recipe


 Hello again!

Today I'm bringing you my Grandpa's famous Italian Hoagie recipe. You couldn't hope for a more delicious Italian sandwich than this one. The best part is it's perfect for a party as well, the presentation is impressive and it's perfect to feed a crowd! The recipe creates 3 large sandwiches. If you want to make only 1 or 2, simply divide the amounts of meats and cheese required. This recipe is best with fresh Boar's Head meats straight from the deli counter. Read on to find out how to make this incredible sandwich!




Ingredients

  • 3 Italian Bread Loaves
  • Iceberg lettuce, cut into long thin shreds
  • Tomatoes, 3 medium or 2 large, cut on the thin side
  • Onion, sliced thin
  • Mayonnaise
  • Tallorico's Hoagie Spread
  • Olive Oil
  • Salt
  • Pepper
  • Oregano
  • Garlic Salt
  • 3/4 lb ham (increase to 1 lb for a thicker sandwich)
  • 1/3 lb genoa salami sliced thin
  • 1/3 lb sandwich pepperoni sliced thin
  • 2/3 lb provolone sliced medium (increase to 1lb if desired)

Directions

Slice loaves of bread down the middle

Spread both sides of the bread with mayo, not too thick

Spread top half of bread with hoagie spread

Cut the meat and cheese slices in half and spread out on the bread. Top with lettuce, tomato, and onion.

Drizzle on olive oil, add salt, peper, oregano and garlic salt lightly on top.

Serve sliced with toothpicks to hold each segment of the sliced sandwich together.

Perfect Peanut Butter Cookie Recipe


This is the absolute best peanut butter cookie recipe, ever! Not to hard, not too soft, simple to put together, and turns out beautifully every time. This recipe was shared with me by my childhood flute teacher, and they're the only peanut butter recipe I've ever made since! They're just that good! I'm submitting these to the local fair cookie competition this year, I will report back with the results! In the meantime, try these for yourself, you won't be disappointed!


Ingredients

  •  1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter, smooth
  • 1/4 cup crisco shortening
  • 1/4 cup (1/2 stick) butter, softened
  • 1 large egg
  • 1 1/4 cup all purpose flour
  • 3/4 teaspoon barking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions


Heat oven to 375 degrees.

In a large bowl with a wooden spoon, mix together both sugars, peanut butter, shortening, butter and the egg until smooth.

Once the mixture is smooth and creamy, stir in flour, baking soda, baking powder and salt until just combined.

Use a medium cookie scoot to shape dough into 1 and 1/4 inch balls. Place balls 3 inches apart on a cookie sheet (use a Silpat baking mat on top of the cookie sheet if available to ensure even baking).

Flatten balls gently in crosscross pattern with a fork dipped in just a bit of water, then granulated sugar.

Bake cookies 8 - 10 minutes or until light brown. Do not overbake!!! Cool cookies 2 minutes on cookie sheet, then remove with spatula to a wire rack. Cool.

Soft and Chewey Chocolate Chip Cookies


I am in LOVE with these Chocolate Chip Cookies! This is kind of a big deal, because in general, I really don't love chocolate chip cookies. Especially the Tollhouse recipe that's on the bag. So not my thing! These, though, are a breed of their own. Soft, chewey, and very light in taste. I love these, and I know you will too!


Ingredients

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1/2 tsp baking powder
  • 1 cup softened salted butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 12oz bag milk chocolate chips (godiva) 

 

Directions

Preheat oven to 375 degrees. Line a baking pan with parchment paper. Set aside.

Cream together softened butter and both sugars for about 3 minutes in an electric stand mixer. Add in both eggs and vanilla and beat for a further 2-3 minutes until fluffy.

Whisk together all dry ingredients in a separate bowl (flour, baking soda, sea salt and baking powder). Add the dry ingredients to the butter, sugar and egg mixture. Mix at low speed until well combined. Add in chocolate chips and mix.

Use a small cookie scoop to place cookies onto a baking sheet. Bake for 8 minutes. DO NOT OVERBAKE! After 8 minutes, take the cookies out of the oven and cool for 2 minutes on the cookie sheets before transferring to a cooling rack.

These cookies are delicious warm and cool! Enjoy!

Nana's Sweet Beef Chili



Chili is one of my top 3 favorite foods (right up there with pizza and ice cream), and I can promise you, if you are a chili connoisseur like me, there is no chili in the world that can compare to my Nana's chili. You can adjust this beef chili recipe to make it more or less sweet, but after trying my hand at many, many chili recipes over the years, I've decided the secret ingredient that makes this chili so unbelievable is the addition of white vinegar. The vinegar and the sugar combine with the spices in this chili to make a flavor profile that is just...divine. Give my Nana's chili recipe a try. I guarantee you, you will love it!



Ingredients

  • 2 1/2 lbs ground beef
  • 2 cloves garlic
  • 1/2 cup chopped onion
  • 1/2cup chopped green pepper
  • 1/2 cup chopped celery
  • 28oz can whole tomatoes (Red Pack)
  • 28oz can tomato sauce
  • 40.5oz light red kidney beans (1 large can, Hanover)
  • 1 1/2 tsp salt
  • 2 tsp paprika
  • 2 tsp chili powder
  • 1 tsp dry mustard
  • 1/2 tsp cloves
  • 1/2 tsp ginger
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/8 tsp cayenne pepper
  • 1 tablespoon vinegar, plus more to taste
  • 1/4 cup brown sugar, plus more to taste
  • more chili powder to taste

Directions

Saute the ground beef along with the garlic, onion, pepper and celery until the beef is cooked through and brown. Drain.

Add the whole tomatoes, tomato sauce, kidney beans and spices. Bring to boil then cook over low heat for at least 30 minutes. Allow to cook slowly for several hours for best results. Enjoy!

World's Best Double Chocolate Brownies


Happy Valentine's Day everyone!


Today, in honor of a day typically celebrated with a dose of sweet treats, I'm sharing my double chocolate brownie recipe! These are the brownies from my childhood and are just so delicious. My husband loves these warm, but I actually prefer their perfectly dense, slightly crunchy texture when cool. Serve these alongside some vanilla ice cream and you will have a sweet day for sure!


Ingredients

  • 4 ounces BAKER's Unsweetened Chocolate
  • 1 cup (2 sticks) salted butter
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cup all-purpose flour
  • 1 cup chopped nuts (optional)
  • 1 cup chocolate chips (options)

Directions

Heat the oven to 350 degrees.

Melt the chocolate and the butter in a heavy saucepan on low heat, stirring constantly. When chocolate is completely melted and free of lumps, stir in sugar until well blended.

Mix in eggs, one at a time, and add vanilla. Stir in the flour. Add nuts or chocolate chips as desired.

Spread the batter into a greated 9x13 inch baking pan, preferably glass.

Bake 30 to 35 minutes or until a toothpick inserted into the center come out with fudgy crumbs. DO NOT OVERBAKE. cool in pan, then cut into squares. Sift on powdered sugar if desired.

Recipe makes 16 large or 24 small brownies. Enjoy!

New Years Cake: Toscatarta Swedish Almond Cake



Happy New Years!! I hope everyone had a lovely NYE and is having a wonderful New Years Day!

We rang in this new year with friends, and a good dose of hygge via this cake. My husband and I have been on a hygge lifestyle kick ever since I saw Frozen on Broadway and fell in love with this amazing/hilarious song.

Following a very hygge-inducing binge of the Great British Baking Show, I vowed one resolution for the new year would be to bake one new/challenging thing per month. They make such interesting creations on that show, it made my customary cupcakes feel flat! Combining my new love for hygge and my new years resolution to bake more interesting creations my husband got me this amazing cookbook for Christmas.

This is my first recipe from this book, and it was a success! It's a very different recipe than I'm used to making, but fairly simple to whip together nonetheless. It's perfect for ringing in a sweet new year!

Toscatarta Swedish Almond Cake

Ingredients for the Cake
  • 7oz pre-packaged marzipan
  • 1 3/4 cups confectioners' sugar
  • 1 3/4 sticks butter, melted and cooled
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons cake flour
  • 1/3 cup cornstarch
  • 1 teaspoon baking powder
 Ingredients for the Topping
  • 1/3 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup honey
  • 3/4 stick putter
  • 1/4 cup slivered almonds

Preheat the oven to 350 degrees.

Grate the marzipan. In a stand mixer with a whisk attachment, beat the grated marzipan and confectioners' sugar together. Beat in the cooled butter. Add in the eggs, one at a time, making sure each egg is completely incorporated. Beat in the vanilla.

Sift together the dry ingredients and fold into the mixture until incorporated. Pour into a greased and/or lined 9 inch round baking pan. Bake for 35-40 minutes or until golder brown, firm to the touch and a skewer insered into the middle comes out clean. Turn the cake out onto a wire rack to cool.

To prepare the topping place all ingredients except the almonds into a saucepan over high heat. Beat with a balloon whisk until the mixture turns a darker color, more similar to honey and starts to separate from the sides of the pan. Stir in almonds and pour over the cake.

I did not do this on my cake, but you can place the cake under a broiler for 5 minutes to brown the topping. I served with homemade whipped cream using this recipe from Alton Brown. Enjoy!

Retro Lime Mint Pear Jello Salad


Jello. Salad. Yes you read that right! Jello salad really isn't in our vocabulary anymore, but it was a THING in the 50's. I have memories of this Jello salad (which is really just Jello made in a Jello mold) at holiday tables growing up. Today, I love making this to serve with special holiday meals. It itself is so refreshing, and served with a cream cheese marshmallow topping makes it so divine. Give this retro recipe a go, you won't regret it!

Jello Ingredients

- 2 cans pear halves
- 2 packages lime flavored jello
- 1/2 teaspoon mint extract

Cream Cheese Marshmallow Topping Ingredients

- 8oz package cream cheese
- 1 cup marshmallow fluff

Directions

Drain pears, save liquid. Add enough water to make 31/2 cups. Dissolve gelatin in liquid according to package directions. Stir in mint extract. Cut a thin lice off the narrow end of pear so fruit will stand and arrange drained pear halves around the side of a 1 1/2 quart rind mold with narrow end down. Carefully pour in gelatin. Chill until firm and unmold. To make the topping, mix the cream cheese and marshmallow, serve on the side (or in a dish in the middle!).

The Best Sweet Noodle Kugel Recipe




We celebrate both Christmas and Hanukkah in my house, and our most established Hanukkah tradition is this sweet noodle kugel recipe! I vividly remember making it for the first time in a humble college apartment, and I haven’t missed a year making it since! This is one of those enjoying “stir everything together” recipes (SO easy!), but turns out unreasonably delicious. It’s just sweet enough but not too sweet, and I’ve never been able to decide if it tastes better hot or cold. I hope you give this recipe a try, once you try it you’ll be sure to incorporate it into your holiday traditions as well!



Kugel Ingredients

- 8 oz. Manischewitz Wide Egg Noodles
- 6 eggs
- 1lb carton small curd 2% cottage cheese
- 8oz cream cheese
- 8oz sour cream
- - 1 stick butter, melted
- 3/4 cup sugar
- 1 tsp. Vanilla
- handful of crushed cornflakes

Topping Ingredients

- 1 cup crushed cornflakes
- 1/2 stick butter, melted
- 1/2 cup brown sugar
- 1 tsp. Cinnamon

Directions

Preheat the oven to 350 degrees and grease a 9x13 bakin pan. Cook the noodles according to package directions. Meanwhile, beat the eggs well and add all other Kugel ingredients. Add the drained noodles and pour into baking pan.

For the topping, mix together all ingredients and spread evenly over noodles in the baking pan. Cook uncovered for 1 1/2 hours.

Apple Cider Winter Sangria


 Happy Holidays Lovelies!

I hope everyone's Thanksgiving was wonderful! Mine was filled with wonderful food, plenty of family, and some fun board games! My mom and I made lots of classic family recipes this year to work on a family cookbook, so there was no shortage of food photography either! While this recipe isn't from my grandmother's recipe box, I've been making a winter sangria for Thanksgiving day for years. It's not just for Thanksgiving, though, this recipe would be so perfect for Christmas, New Years, or any special day this winter! It's not too sweet, but it's so flavorful and refreshing with the taste of wonderful winter fruit. There's one caveat, though; it's dangerously easy to drink! Be sure to prepare this the night before so the fruit flavors have all night to infuse into the wine. When you try this I'm sure you'll be as hooked as I am on sangria (however, beware, because after having this homemade sangria each year sangria from bars and restaurants never seems to compare!).



Apple Cider Winter Sangria

  • 2 Bottles Spanish Wine
  • 2.5 Cups Apple Cider
  • 3/4 Cup Brandy
  • 3 Honey Crisp Apples, Cubed
  • 3 Pears, Cubed
  • 2 Oranges, Cubed
  • Arils of 1 Pomegranate
  • 2 Cinnamon Sticks, Plus More for Garnish
  • 1 Cup Sugar, Plus More to Taste
Combine all ingredients in large pitcher and refrigerate overnight. Serve chilled with cinnamon sticks for garnish. Enjoy!

Healthy Slow Cooker Jerk Chicken With Grilled Pinapples


My absolute favorite type of recipes to make are easy, healthy slow cooker dinners that you can put together in 5 minutes then leave to cook all day. I love recipes that are fast and easy in the morning,  then payoff big with tender, flavorful dishes at the end of the day! This recipe totally fits the bill.

For this Jerk Chicken, it's a simple matter of combining the spice mixture, rubbing it on the chicken, and putting it in the crock pot! Grilled pineapples are the perfect accompaniment and also happen to be super quick (especially if you buy pre-cored pinapple). The pineapple adds a freshness and sweetness to this dish which works so well with the chicken's complex flavor. Yum!

Ingredients
  •  4 Chicken Breasts
  • 1/2 Cup Chicken Stock
  • 1 Pineapple, prepared by cutting into 1/2 inch thick rings
  • 2 Teaspoons Thyme
  • 4 Teaspoons Paprika
  • 4 Teaspoons Onion Powder
  • 4 Teaspoons Garlic Powder
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Allspice
  • 1 Teaspoon Salt
  • (Optional) Dash Cayenne Pepper
  • Dried or Fresh Parsley for Garnish

Directions

1.) Combine all spices, except parsley, in a small bowl (thyme, paprika, onion powder, garlic powder, pepper, cinnamon, allspice and salt).

2.) Pour the 1/2 cup chicken stock into the slow cooker.

3.) Rub spice mixture onto all sides of the chicken breasts and place in the slow cooker.

 4.) Set slow cooker on high for 3-4 hours or low for 5-6 hours.

 5.) Before serving, prepare the grilled pinapple by slicing pinapple into rings. Grill on a traditional grill or an indoor grill set on medium-high heat for 8-10 minutes.

6.) Garnish pinapples and chicken with parsley, and enjoy!

Slow Cooker Italian Chicken Stew


It's not that I ate a lot of stew when I lived in Italy for a few months studying abroad (who turns up pizza and pasta when it is perfectly accepted to eat them all day, every day?), but I did eat my fair share of delicious, thick, aged balsamic vinegar (with some bread, and  always on the size of pizza and pasta, of course ;). It's the balsamic drizzled into the broth at the end that makes this dish SO delicious and flavorful, and just a bit Italian! Otherwise, it is a healthy but hearty, easy to whip up, warming chicken stew perfect for the fall weather the calendar is promising to bring soon!



This is one of those wonderful crock pot dishes where you really don't have to worry about over-spicing. Seriously, go hard on the seasonings for this one. Adding plenty of spices flavors up the broth so that the addition of balsamic at the end makes the perfect addition, instead of being over powering. This recipe is an easy one too; the only time involved is in the chopping of the vegetables. Once they go in the crock pot it's a fix it and forget it meal! I hope you put this recipe to use to warm you up this fall, I'm sure it will become a favorite of yours just as it has mine!

Slow Cooker Italian Chicken Stew


3 chicken breasts
16oz baby red potatoes
4 carrot sticks
4 celery sticks
1 tablespoon jarred garlic
2 tomatoes
1 large onion
2 cups chicken broth (1 can)
1 tablespoon oregano
4 bay leaves
1 tablespoon thyme
2 teaspoons celery salt
1 tablespoon rosemary
1 tablespoon cornstarch
good balsamic
salt and pepper to taste

Layer chicken breasts at the bottom of the crock pot. Add in potatoes, carrots, celery garlic, tomatoes, onion, broth and spices (except balsamic).

Set slow cooker to low for 5-6 hours.

Before serving, mix the tablespoon of cornstarch with 1/4 cup of water and stir to dissolve. Add the cornstarch mixture into the crock pot and let cook for 5 to 10 more minutes to slightly thicken the broth.

Ladle soup into serving bowls and drizzle with balsamic vinegar. Serve and enjoy!

Makes 5 servings, 340 calories per serving

Heavenly Apple Pie Recipe


Fall is far and away my favorite season. I love seasonal-specific activities and traditions, too, so every year I go apple picking to help me transition from summer into fall! Eating all the apples I pick is always a challenge (my eyes and picking basket are always bigger than my stomache!), so baking pies are perfect to help you enjoy the best seasonal produce before it's gone!

Perfect Peach Pie Recipe


To me baking should evoke feelings of homey-ness, like it would be something your grandmother lovingly crafted. For that reason, I never really got into heavily decorating my baked goods. This summer, though, after picking fresh fruit at the farm I was inspired to bake a peach pie. Somehow, no matter how decorative you get with your lattice top, a pie still maintains it's home grown feeling!
