Slow Cooker Italian Chicken Stew


It's not that I ate a lot of stew when I lived in Italy for a few months studying abroad (who turns up pizza and pasta when it is perfectly accepted to eat them all day, every day?), but I did eat my fair share of delicious, thick, aged balsamic vinegar (with some bread, and  always on the size of pizza and pasta, of course ;). It's the balsamic drizzled into the broth at the end that makes this dish SO delicious and flavorful, and just a bit Italian! Otherwise, it is a healthy but hearty, easy to whip up, warming chicken stew perfect for the fall weather the calendar is promising to bring soon!



This is one of those wonderful crock pot dishes where you really don't have to worry about over-spicing. Seriously, go hard on the seasonings for this one. Adding plenty of spices flavors up the broth so that the addition of balsamic at the end makes the perfect addition, instead of being over powering. This recipe is an easy one too; the only time involved is in the chopping of the vegetables. Once they go in the crock pot it's a fix it and forget it meal! Slow Cooker Italian Chicken Stew


3 chicken breasts
16oz baby red potatoes
4 carrot sticks
4 celery sticks
1 tablespoon jarred garlic
2 tomatoes
1 large onion
2 cups chicken broth (1 can)
1 tablespoon oregano
4 bay leaves
1 tablespoon thyme
2 teaspoons celery salt
1 tablespoon rosemary
1 tablespoon cornstarch
good balsamic
salt and pepper to taste

Layer chicken breasts at the bottom of the crock pot. Add in potatoes, carrots, celery garlic, tomatoes, onion, broth and spices (except balsamic).

Set slow cooker to low for 5-6 hours.

Before serving, mix the tablespoon of cornstarch with 1/4 cup of water and stir to dissolve. Add the cornstarch mixture into the crock pot and let cook for 5 to 10 more minutes to slightly thicken the broth.

Ladle soup into serving bowls and drizzle with balsamic vinegar. Serve and enjoy!

Makes 5 servings, 340 calories per serving
