Healthy Slow Cooker Jerk Chicken With Grilled Pinapples


My absolute favorite type of recipes to make are easy, healthy slow cooker dinners that you can put together in 5 minutes then leave to cook all day. I love recipes that are fast and easy in the morning,  then payoff big with tender, flavorful dishes at the end of the day! This recipe totally fits the bill.

For this Jerk Chicken, it's a simple matter of combining the spice mixture, rubbing it on the chicken, and putting it in the crock pot! Grilled pineapples are the perfect accompaniment and also happen to be super quick (especially if you buy pre-cored pinapple). The pineapple adds a freshness and sweetness to this dish which works so well with the chicken's complex flavor. Yum!

Ingredients
  •  4 Chicken Breasts
  • 1/2 Cup Chicken Stock
  • 1 Pineapple, prepared by cutting into 1/2 inch thick rings
  • 2 Teaspoons Thyme
  • 4 Teaspoons Paprika
  • 4 Teaspoons Onion Powder
  • 4 Teaspoons Garlic Powder
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Allspice
  • 1 Teaspoon Salt
  • (Optional) Dash Cayenne Pepper
  • Dried or Fresh Parsley for Garnish

Directions

1.) Combine all spices, except parsley, in a small bowl (thyme, paprika, onion powder, garlic powder, pepper, cinnamon, allspice and salt).

2.) Pour the 1/2 cup chicken stock into the slow cooker.

3.) Rub spice mixture onto all sides of the chicken breasts and place in the slow cooker.

 4.) Set slow cooker on high for 3-4 hours or low for 5-6 hours.

 5.) Before serving, prepare the grilled pinapple by slicing pinapple into rings. Grill on a traditional grill or an indoor grill set on medium-high heat for 8-10 minutes.

6.) Garnish pinapples and chicken with parsley, and enjoy!

What I'm Loving Volume 1


Oh my gosh, it finally feels like FALL! September in Philadelphia has been SWELTERING, but this weekend it finally broke! I was loving the 70 degree weather and celebrated by participating in some of my favorite fall activities; roasting s'mores by the fire, pumpkin picking at the farm and enjoying a cool autumn night at a haunted house!



This week also came with a spot of good news, I'm officially an Occupational Therapist! I found out this week that I passed the national licensing board exam for the profession! I've earned three letter credentials after my name; Katie, OTR!

These past couple of weeks I have really been loving finding a way to be a tourist at home. After experiencing my dream trip to France, my wanderlust has done nothing but grown. I'm determined to feed my wanderlust by appreciating destinations closer to home and to remind myself that a lot of  places that are very familiar to me are dream destinations for other people. My mom and I have been day tripping to NYC regularly since I was a little kid (at this point, I'm basically a professional tourist!) and I know that I take the amazing sights of the city for grated sometimes, just because it's so accessible to me. I spent two days in NYC recently and was determined to see it with the wander of a first timer; it didn't disappoint! We even did some staple tourist attractions that we've never done before. We walked the Brooklyn Bridge and went to the top of the Empire State Building! Both were incredible. Look out for a few posts detailing my days in NYC, coming soon!

DIY Pottery Barn Inspired Halloween Crow Wreath


I love me some Pottery Barn. I've been on a real Pottery Barn kick recently, I think because I registered there for my wedding I got in the mood for their aesthetic recently. I've always coveted their Halloween items too, and I usually splurge on one or two each season!

This year they are selling this georgeous, rustic, simple bat wreath. I loved it the moment I saw it, but I also said to myself, I could make something even better. I love the look of the black bats arranged simply around a grapevine wreath, but in person I think the wreath lacks a bit of dimension; the bats sit very flat on the face of the wreath.


My version involves arranging feathered crows around the wreath. I love my version even more than Pottery Barn's because of the dimension the crows give to the wreath. Plus, it's a bit more realistic of a scene! You could definitely find crows perching on a bramble of branches on Halloween night!


I've made a few DIY wreaths in my day, and I have to say this is the easiest of all time! All it involves is purchasing your materials (very easy, I found them all at Michaels and they have these crows every year), and arranging your crows around the wreath. I used hot glue to permanently attach the crows in place, but if you prefer to have the option of removing the crows later, twist ties would work just as well.




Materials:

- 3 to 4 feathered crows. I found mine at Michaels for $6 on sale.
- 1 grapevine wreath. Mine is 18 inches. I got this for $2.50 at Michaels with a coupon.
- Hot glue or twist ties to secure crows to wreath.
- Pliers (optional)

Instructions:

- Arrange crows on wreath to your satisfaction. To make the crows each look a bit different, I recommend varying their posture, with some bending over, and some standing up tall.
- If your crows legs are wire, like mine were, using pliers to manipulate the wire to attach properly to the wreath can be helpful.
- Secure crows using either twisty ties or hot glue. Allow to dry.
- Display your gorgeous, spooky Halloween wreath! It's as easy as that!





The overall cost of my wreath was $20 for three crows and the grapevine wreath form. Not bad when you compare it to $60 full price for Pottery Barn's bat version! This is my type of DIY, super easy, which means super fun, and absolutely impossible to screw up while looking completely classy. It even beats the original in my book!

Fall Survival Kit

Ahh, it's finally feeling like Fall! When the weather gets crisp and fresh in Autumn in always makes me feel energized, like it's a new beginning! I usually start to feather my nest this time of year and refresh my space and my wardrobe. This little collection of Fall essentials is a sample of the things I've been enjoying this season. I hope it brings you some inspiration for items that add comfort, style and cozy to your Autumn!

1.) I've been wearing my black felt floppy hat since the summer, and it's been an absolute staple in my wardrobe ever since I picked it up! Pair with vest and boots for instant Autumn chic!
2.) When the weather starts to get cold I burn candles non-stop, and this scent has got to be my absolute favorite this year. It smells slightly of caramel apple, but it's not too sweet or too sharp, it's just right!
3.) I purchased this pom-pom blanket in grey to add some texture and softness to my space this season. It is so incredibly soft! See it in my space on my Autumn home tour!
4.) I'm in love with this Autumn in NYC print from Rifle Paper Co. I'm planning on including it in a gallery ledge that I'm working on!
5.) I bought new Hunter boots in my wedding blue color over the summer when I was afraid it was going to rain on my wedding day (It did, but not until after the photos so the boots never came out). But how great is this muted pink color for Fall? Swoon!
6.) I need a humidifier to survive the winter, but I was so sick of the boxy, plastic-y ones that are eyesores in my space. I found this humidifier on Amazon, it's fairly tall and super elegant and doesn't clash with my decor at all. Plus, it sits on the floor so it doesn't take up precious surface space!

Halloween Home Tour 2017


Halloween is my favorite holiday. Don't get me wrong, I LOVE Christmas, but something about the time of year and all the fun activities (pumpkin picking! Haunted houses! Parties!) makes me truly love Halloween. It's my favorite season to decorate for because of the amount of creativity it affords. Do you want to set up a realistic scene? A grouping of Halloween chotchkes? Decorate in orange? In black and white? In purple and green? Glittery or Rustic? Macabre or more PG? Halloween has so many options, and anything goes!

I usually begin scheming my Halloween decor in August (yes, seriously!), but this year I didn't get started until a bit later because I was so preoccupied with incorporating wedding and honeymoon pieces into my decor. As a result, my decorations are a bit more minimal than previous years, but it's a look I'm really digging.

My usual m.o. for Halloween decor is sticking with decorations in black, white and shades of grey, and this year is no different! I love the clean look black and white gives and I think it helps Halloween items look more grown-up, distinctive and fit in more seamlessly with regular decor.

10 Foods You Must Eat In Paris

Before going to Paris, I researched and planned almost every meal we would have there. I thought it would be such a waste if while in Paris, a foodie capital of the world, we “wasted” meals by eating whatever was easiest when hunger-emergencies struck. The advanced planning was SO WORTH IT and we had some seriously mindbogglingly good food while in Paris!

Today I’m sharing 10 foods you absolutely can’t miss when you’re in Paris, and the best places for you to get them! As a bonus, most things on this list are very budget friendly, I even wrestled with titling this post “Best Cheap Eats.” So, without further ado, read on to learn about the food in Paris that’s so good, you need to include it in your itinerary!


1.) Eclaires

From Where: Eclaire de Genie

The word eclaire, when translated to English, means enlightened. When it comes to eclaires from the patisserie Eclaire de Genie, I think this translation is totally appropriate! The eclaires from Eclaire de Genie go beyond the basic cream-filled, chocolate frosted traditional eclaire. These eclaires come in a million super interesting flavor combinations (my favorite was lime and mint, pictured above!).



2.) Ice Cream

From Where: Berthillon

This world famous ice cream is so famous for a reason: Its. So. Flavorful. Kind of like Italian Gelato, the purity of the flavors of the ice cream really come through. The ice cream flavors, such as coconut, or strawberry, are more pronounced than the sweetness of the ice cream, making eating Berthillon ice cream such a unique and gourmet experience. The original Berthillon store is located on Ile Saint-Louis, but you can find the ice cream sold at many ice cream carts and restaurants throughout Paris.




3.) Pastries

From Where: Gourmet patisseries throughout Paris. My favorites are Laduree, Pierre Herme, Angelina and Patisserie des Reves.

Little pastry creations from the gourmet patisseries throughout Paris were probably my favorite thing to eat while I was there! For 6 or so euro, you get a small work of art to take with you and enjoy. These little gourmet pastries are so photogenic, but here's the thing: they actually taste even BETTER than they look. Seriously. SERIOUSLY. They have to be tried to be believed, but don't forget to snap a photo too (Instagram will thank you).




4.) Falafel

From Where: L'As du Fallafel

 In the Marais, the Jewish district of Paris, runs a very charming street called Rue des Rosiers where you'll find lots of little boutiques, Jewish bakeries, and a ton of Falafel shops. The best (and most famous) of these is L'As de Fallafel, which will make you a pita absolutely stuffed with delicious falafel and mounds of toppings so delicious I can hardly describe it (and all for about 6 euro). If you're in the Marais this is a must-stop while you're there for a super flavorful, super affordable meal!


5.) Traditional Jewish Pastries from Bakeries in the Marais District

From Where: Sacha Finkelsteins or Muricano Patisseries

While you're in the Marais, after you've gotten your falafel (or before if you're like me), you have to stop at one of the Jewish bakeries just a few doors away on the Rue des Rosiers for desert. The pastries and cookies you will get from these places will have more of a homey feel to them than those you can get at the gourmet patisseries (like Laduree or Pierre Herme) around the city, but they are absolutely no less delicious! This is a must-stop for some local flavor when you're in the Marais.



6.) Croque Monsieur

From Where: Cafe St. Regis

I ordered a croque monsieur at each cafe we ate at in Paris (you know, ahem, for research) and my absolute favorite, by far, was from Cafe St. Regis on Ile Saint-Louis. The cheese was the meltiest, the bread and ham the most flavorful, and the setting the most charming (this may have been my favorite cafe in all of France). While a croque monsieur might not look like much, a ham and cheese melt is really never bad. And when it's good, like this one from St. Regis, it's really, REALLY good.



7.) Gelato

From Where: Amorino

I know what you're thinking, "Gelato? This is France!?" I know and as a real Italiophile, I can tell you this gelato is so good that you won't second guess eating it again and again while you're in Paris. I wanted to know more about how an Italian food could be such a huge thing in France, and (according to my wikipedia whiz husband) it's a company founded by two Italians who grew up in France. Well, this Gelato competes with the best of them (and that comes from someone who studied abroad and has returned to Italy, and makes regular pilgrimages to the Grom location in NYC. So, I know gelato). I know you won't miss passing by an Amorino store while you're in Paris, so do yourself a favor and get one of the gorgeous flower shaped cones to go! Don't forget to add the macaroon on top! You'll thank me later :)



8.) French Charcuterie

From Where: Fromagerie DANARD

Absolutely not to be missed when you're in Paris is a charcuterie of cheeses and meats made in France. France has over 200 regional cheeses, and eating a charcuteie plate for dinner is just so European that this is should be on your bucket list. Whether you put together your own chacuterie spread and take it for a picnic or  you go to a fromagerie where they will put it together for you for dinner (like we did at Fromagerie DANARD), you will love the experience of getting so many tastes of regional products unique to France. Plus, it's the perfect excuse to order that bottle of wine. It's the perfect pairing!



9.) Baguette Sandwiches

From Where: Galeries Lafayette Gourmand

The perfect street food to pick up and take for a picnic also happens to be one of the tastiest things you can find in Paris! I love a good sandwich and we had one of our favorite picnic lunches in Paris courtesy of these baguette sandwiches from Galeries Lafayette Gourmand (the food store associated with the department store Galeries Lafayette). When the bread is divine (as it always is in Paris), and the cheese and meat fresh, this makes for a heavenly (and cost effective) picnic with some Orangina and macarons on the side!



10.) Hot Chocolate

From Where: Angelina or Cafe de Flore

I had hot chocolate from the two most lauded hot chocolate vendors in Paris: Angelina and Cafe de Flore. I honestly can't decide which one I like better! Cafe de Flore's is a bit more sweet, while Angelina's is a bit more thick and dark chocolatey. If you twisted my arm to recommend one I would maybe say Angelina just because of the divine homemade whipped cream that accompanied it, but really you can't go wrong with either! Make sure you make time to stop at at least one of these famous restaurants to soak up Paris history, ambiance, and of course the chocolate!

6 Ways To Cozy Up Your Home For Fall


While my home is constantly evolving with decor updates happening year round, no season inspires me to change it up as much as fall. As soon as September hits and I start to get a sense of the cooler weather to come, I’m always compelled to start swapping out my bright, vibrant, saturated summer decor for more muted fall pieces. Decorating for fall isn’t only about putting pumpkins everywhere (though that certainly helps!). I’m sharing my list of non-pumpkin decor changes you can make to your home to up the cozy factor through fall (and all of the colder months) to make you feel even more at home during our longer autumn nights.

 1.) Candles

Heralded by fall lovers everywhere, it would be easy for a skeptic to underestimate the cozy-ing power of candles. Whether you choose scented candles in jars or add a few hurricanes and pillar candles to your home, candles add the cozy, comfortable, dramatic and moody feels you crave in the fall.

2.) Layer Up Your Bedding With Extra Pillows and Throws

The air conditioner is off, the heat might not be on yet, but Fall is the perfect time to start layering up your bedding to add that sumptuous, sink-into-it look to your bedroom decor. Add a comforter or throw folded at the edge of your bed and an extra layer of pillows to up the cozy factor of your bedroom for Fall.


3.) Bring In Fall’s Natural Beauty

While the moment for perfectly ripe fresh berries and fruit may have come to an end, Fall has so many natural elements so perfect for cozy autumn decorating. Bring in a vase full of sunflowers or a bowl full of mini pumpkins. Put together a a bouquet of wheat and dried lavender for a display that will last all season. There’s so much natural beauty to be found in the fall!

4.) Add texture

If you’re like me, all through Spring and Summer you crave minimal, clean, light colored decor and accessories. As you accessorize for the fall, keep your eye out for woven baskets, terra cotta vases, velvet throw pillows, or other household accessories that add texture, warmth  and depth to your decor that will up the cozy factor all season long.

5.) Add personal touches

Nothing makes you feel cozier than happy memories. Invest in some new picture frames and place them everywhere, coffee tables, on top of your dresser, on your beside table, to sprinkle happy memories throughout your home. Pictures from summer adventures can match your decor for fall by turning them black and white before printing.

6.) Add darker touches

While bright white furniture, bedding, and accessories feel right at home during the summer, fall calls for warmer colors to complement a more muted color palette. Swap out white gallery frames for black (a black frame with a crisp white mat will always look classic, and is so perfect for fall), swap vibrantly colored throw pillows for their more muted cousins. Break up your bright white furniture with accessories, as I did on my bright white coffee table by adding a cream vase and a silver tray and accessories.
